Spinach Pie (ikras bi sabanikh)

A tasty little hand held spinach pie for your healthy snacking pleasure.

We had nice weather here so the smile factor was elevated this weekend.

And I made spinach pies.  I was excited to get an email from one of my readers requesting this recipe.

See, my brother is tempting the palates of his clients by telling them about the foods my mom used to cook for us.  So one of his customers who is also one of my readers asked about this recipe.  A big thank you to her and to my brother.

Honestly, I think my brother is as excited about this blog as I am.

This is similar to spanakopita which many of us are familiar with except this doesn’t have feta cheese.  But you can totally add feta if you prefer.  That’s been known to happen in my kitchen. :)

Traditionally, they are triangular shaped but I’m all about making things easier.  I just cut out little dough discs with a biscuit cutter, put a tablespoon of the filling on, pressed 2 discs together and crimped the edges with a fork.

The filling is spinach mixed with onion, some olive oil, lemon juice and sumac spice. When you’re in the mood for something kind of soury, salty and you need carbs, one of these little pies will take care of that craving.

In case you’re wondering – sumac spice is not poison.  It has lemony, tangy notes and is commonly used in Middle Eastern cuisine.  You can find sumac at a Middle Eastern or Indian grocery or online.

For the dough – you can use my pita bread recipe.  Or if you are short on time, feel free to get a frozen bread dough or your favorite pizza place might be willing to sell you a pizza dough.

Make a batch or 2 and freeze them.

Ingredients

  • Filling
  • 1 10 oz. package frozen spinach

  • 1 medium onion diced

  • ¼ cup olive oil

  • 3 tablespoons lemon juice

  • 1 tablespoon sumac spice

  • 2 teaspoons salt

  • 1 egg lightly beaten for egg wash

Directions

  • Preheat oven to 400 degrees.
  • Line a rimmed baking pan with parchment paper or silicon mat.
  • Combine the filling ingredients, mix thoroughly until incorporated.
  • Cut out dough discs with a biscuit cutter.
  • Place 1 tablespoon filling in center of one dough disc, place another disc on top and press edges together.
  • Repeat until all dough is used up or all filling used up.
  • Press all around the edges with a fork.
  • Bake for 15 minutes or until golden.
  • Enjoy!
