No Bake Date Granola Energy Bites

These little energy bites are packed with good things that will help give you a lift from the afternoon slump.

The best part.  They are no bake.  You can whip them up the night before and take them to work with you.  What a great healthy snack for that afternoon snack attack.  And they have dates in them.  That power packed little fruit that’s so good for you.

If you’ve been around AN for any length of time you know that I love dates.  I’ve made a few recipes with dates in them.

Update:  I forgot to tell you I added cinnamon to the mix.  I remembered it after I just ate one and could taste the cinnamon.  Recipe has been updated.

These little balls of energy contain dates, homemade almond butter, oats, pistachios, cinnamon, and a little honey.

The almond butter has no additives, it’s 100% almonds ground up.

Here’s how I did it.

Place 1 cup almonds in a food processor fitted with an “s” blade.  Turn it on high and let it go.  That’s it!

You’ll need to let it go for 10 to 20 minutes depending on your food processor.  Mine took about 10 minutes to get the right consistency.

During processing you’ll have to stop the machine a couple of times to scrape down what has gathered at the top.

You can add any flavorings you like too.  Such as cinnamon or honey.  I didn’t add anything to this batch but I will next time.  I only ground up 1 cup and used it for this recipe.  1 cup of whole almonds yielded 1/2 cup almond butter.

For the dates – put them in the food processor and run it until it becomes paste.  You may need to add a drop or 2 of water smooth it out.  If you can get a hold of medjool dates don’t pass them up.  They are the best.

Oh, and your kids will like them too. If they prefer them a little sweeter you can add a little more honey to the mix.  You can substitute peanut butter if you don’t want to make or buy almond butter.  And they travel well so they’re easy to pack in the lunch box.

Ingredients

  • 1 cup dates (ground in food processor)

  • 1 cup oats raw

  • ½ cup almond butter (or peanut butter)

  • ¼ cup pistachios chopped

  • 1 tablespoon cinnamon

  • 1 to 2 tablespoons honey

Directions

  • Combine all the ingredients.
  • Shape into balls
  • Enjoy!
