Hummus Veggie Wrap

Homemade hummus, fresh vegetables, olives, artichokes and feta cheese wrapped in a toasted tortilla.  This hummus veggie wrap is a make-you-feel-good meal.

Today’s recipe was inspired by me wanting a meatless, easy to assemble-I-want-to-celebrate-Spring-meal.  I’m ready to bring on the lighter eats.  Sandwiches, salads, grilled, I want it all.  I called this a recipe but, really, it’s not a recipe.

You can make this with whatever variety of vegetables you’re in the mood for.  I layered this one with hummus, spinach, cucumbers, tomatoes, artichokes, olives, scallions, and of course, feta cheese.  In that order.

The feta for me is a must.  You know how much I like feta cheese.

You can use store bought hummus, but it’s so easy to make, so why not?  It only takes about 15 minutes and it’s so worth it. Homemade is 1,000 times better than store bought.  Sold yet?  Click here to get the recipe.

I toasted the tortilla in a skillet.  If you have a cast iron skillet it’s very easy to quickly toast the tortilla in it.  The cast iron gives it a nice golden crispy crust.

Just heat up the skillet.  Drizzle in about 1 teaspoon of olive oil and heat the oil for about 30 seconds.  Lay the tortilla in the skillet and  twist it around in a circular motion with your fingers a couple of times.  This is to oil the tortilla.  Let it sit for about 1 minute until toasted.  Check on it a couple of times to make sure it’s not burning.

Remove the tortilla from the skillet. Layer in all of the ingredients and roll it up.

No fork needed.

Ingredients

  • 2 – 8 or 10 inch tortillas

  • Homemade hummus

  • Spinach

  • Artichoke hearts

  • Olives

  • Scallions

  • Cucumbers

  • Tomatoes

  • Feta cheese

Directions

  • Chop your vegetables
  • Toast the tortilla in a skillet.
  • Spread the hummus on the tortillas.
  • Layer the chopped vegetables in the tortillas.
  • Sprinkle on the feta cheese.
  • Roll and eat.
  • Enjoy!
