Caramel Stuffed Apple Cider Cookies

Caramel stuffed apple cider cookies.  Sweet and crunchy with a gooey caramel center.

You know that cookie?  The one you can’t stop thinking about?  You get to taste one that someone made and you just can’t stop thinking about it because it’s so stinkin’ good.

This is that cookie.

I first tasted these lovely little gems a few weeks ago when a friend of ours made them for a party.

Um…yah, they are good.

Actually, there were a few of us tasting them at the same time.  The expression on the faces at the first bite…no words needed.

Two things make this cookie extra delicious.  There’s instant apple cider drink mix in the dough. They’re stuffed with caramel.

Not only is this cookie the “I can’t  get it off my mind” kind of cookie but it’s so easy to make.  Win-win!

That apple cider-y taste is running through every bite.  Then you hit the gooey caramel…perfection.

To stuff them with the caramel I just scooped the dough from the bowl into my hand with a small cookie scoop.  (< not an affiliate link.  I just love that cookie scoop.) I pushed the piece of caramel into the dough and wrapped the dough around it.  I found this way easier than trying to stuff them while they are on a flat surface.

Of course, you might find it easier to work on a flat surface.  We all have our preferences.

Let them cool before biting into it.  The caramel will burn your mouth if you try them right out of the oven.  The caramel will stay soft even when the cookies are cooled.

If you put them in the freezer like I did just microwave for 15 – 25 seconds so the caramel will melt.

Ingredients

  • 1/2 cup unsalted butter softened at room temperature

  • 1/2 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 box apple cider instant drink mix. (I used Alpine Spiced 7.4 ounce box) (not sugar free)

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1 1/2 cups all purpose flour

  • 16 caramels (I used Kraft) unwrapped

Directions

  • Preheat oven to 350
  • Line 2 baking sheets with silicone or parchment paper
  • In a large bowl, cream together butter, sugar, salt and 5 packets of apple cider mix until fluffy and smooth.
  • Beat in the egg and vanilla extract until combined being careful to not beat too much.
  • Mix in the baking soda and baking powder.
  • Add the flour. At this point I mixed by hand until it was combined.
  • With a cookie scoop, scoop the dough scraping off excess against the bowl.
  • Flatten the dough slightly in your hand and set a caramel in the center of the dough. Gather the dough around the caramel sealing it well.
  • Place cookies 2 inches apart on the sheets
  • Bake 12-15 minutes or until golden brown on the edges.
  • Let cool. I let them cool right on the silicone with no problem. If you use parchment you might have to move them to a cooling rack and cool them upside down on the racks.
