You know those dishes your mom made that you just loved? This potato hash is one of those.

I didn’t even know what to call it. It’s something she would just throw together for us for breakfast or sometimes dinner.
I asked her the other day if she remembers what she put in it. It turns out it was just potato, onion, kielbasa and eggs. Go figure. I settled on potato hash.
So let’s talk about the components of this dish for a second. Shall we?
Onions – the true essence of onion shines through when they are browned a little on the edges, or when caramelized. They take on a sweetness that just adds deliciousness to savory dishes. This dish is simple but browning the onions really adds punch to the flavor.
Then there’s potatoes.
So versatile. They can be cooked a million ways. Mashed, baked, fried…
For this dish they should be browned until a little crispy on the edges.
Add to that some garlic. Mouth watering.
Potato, onion, sausage, eggs with a little garlic? A winning combination.
I changed it up a bit by using smoked turkey sausage. I thought you would appreciate the calories saved. Spring is coming and we are all so ready to break out of the heavy layers. A few calories saved. We like that.
Which reminds me. Have you had enough snow already? The snow and ice from Sunday and Monday is melting off of our roof as I sit here writing. Hooray for melting snow! We’ve had more than enough and I’d like to move on to Spring now.
My mom used to scramble the eggs in. Feel free to do the same. I didn’t do that because it just doesn’t look pretty in the photos. Either way, whether you scramble the eggs in or add a soft cooked egg on top you will like love this. Take my word on it.
Mom’s Potato Hash with Smoked Turkey Sausage
No measurements needed here. This isn’t really a recipe it’s more a method. You add as much or as little as you want. But to help you plan I included measurements.
Ingredients
4 ounces (fully cooked) turkey sausage sliced
½ small onion chopped
2 medium potatoes diced (try to cut them all approximately the same size)
1 clove garlic minced
1½ teaspoons salt or to taste
½ teaspoon black pepper
olive oil for sautéing
warm water for sautéing
Soft cooked egg
Directions
- Heat ¼ cup of water in a medium skillet and add the sausage. Brown on each side. Remove from skillet and set aside. (sausage if fully cooked from the package so this doesn’t take long).
- Heat 1 tablespoon or so olive oil in a skillet on medium-high.
- Add the chopped onion and sauté until browned on the edges stirring occasionally. About 3 minutes.
- Add the garlic and sauté a minute more. Avoid burning the garlic.
- Add the potato and a little more olive oil if pan is dry.
- Add salt and pepper to taste.
- Stir around a little and let them start to brown then add 2 or 3 tablespoons of warm water (never add cold water to a hot pan). (I do this to avoid adding more oil). Put a lid on top and let them cook stirring occasionally. (about 5 minutes)
- Poke the potatoes with a knife point to check for doneness. The knife should slide through easily.
- Add a soft cooked egg and the cooked sausage.
- Enjoy!
- In a small bowl beat 2 eggs with a fork until lightly frothy.
- Pour over the cooked potato mixture. Let it sit for about 30 seconds then stir slowly but continually until eggs are soft cooked.
- Add salt and pepper to taste
- Enjoy!
