These tahini cookies are brimming with good for you ingredients like tahini, almonds, dates and oats then dipped in dark chocolate. You’ll want to sink your teeth into these little gems.

These cookies became a reality because I was trying to think of different ways to use tahini. As I searched around I discovered a few different recipes for tahini brownies and tahini cookies. I didn’t think of dessert at first, but….why not? We all love cookies. Many of the recipes, however, used just a couple of teaspoons of tahini. I wanted the tahini to be one of the main ingredients. I thought of the ever popular flour less peanut butter cookie. I wanted to do something similar to that but without all that sugar.
Without flour and sugar I needed to find something that would hold the dough together. Then I remembered these energy bites. Dates and oats will do the trick. So off to the kitchen I went.

My recipe has 1 cup of tahini in it. It’s sweetened with a little maple syrup and a little honey. There are chopped almonds, some dates, and oats in there. As you can see no refined sugar. I added 60% dark chocolate and a little bit of brewed coffee. Then the final dip in dark chocolate adds just enough sweetness to put this over the top. Major layers of flavor going on in here.

Chocolate Dipped Tahini Cookies
Course: UncategorizedThis recipe yields 12-15 cookies
Ingredients
1 cup old fashioned oats
1 teaspoon cinnamon
¼ teaspoon salt
3 oz. dark chocolate chopped
¼ cup chopped almonds
¼ cup pitted dates
1 cup tahini
2 tablespoons honey
2 tablespoons maple syrup
1 tablespoon brewed coffee (cold)
1 cup chocolate chips for dipping (optional) melted. I used Wilton dark chocolate for melting
Directions
- Preheat oven to 350
- Line a rimmed baking pan with parchment paper or a silpat.
- In a large bowl combine the oats and the next 4 ingredients.
- In a smal bowl microwave the dates for 25 seconds until soft.
- Smash the dates with a fork then combine with the tahini and the next 3 ingredients.
- Pour the tahini mixture into the bowl with the oats.
- Stir thoroughly to combine. Try to get your hands in there to stir. You’ll be able to more combine everything more thoroughly.
- Using a small cookie scoop or a spoon scoop out enough to form a 1 inch ball.
- Line the balls up in the pan. Press on each one to flatten. Make them as thick or thin as you like.
- Bake at 350 for 15 to 20 minutes until golden.
- Remove from oven and let cool.
- Dip in chocolate if you like according to package instructions.
- Enjoy!
