Today we have a little fusion cuisine going on. A breakfast tostada with hummus and sloppy joe style ground turkey. So delicious.
My usual breakfast routine is a couple of egg whites with toast and coffee. Sometimes, though, I need a change. For a while now I’ve been thinking about making a breakfast tostada. Trouble is I couldn’t decide what I wanted to put on it.
The obvious ingredients a corn tortilla and egg. No brainer there.
The other items…it just wasn’t coming together.
So I stood there in front of the open fridge hoping something would talk to me.
After a couple of glances around that big silver cold box it finally came together.
I pulled out some leftover sloppy joe that I made out of ground turkey, some hummus, the eggs, and the fusion breakfast was born.
I toasted the tortilla in a skillet coated with a little bit of olive oil until it was lightly browned. Then I layered on the toppings. Oh my…it was…delicious.
Speaking of sloppy joes, my Mr. made the easiest ever sloppy joe for himself one day when he was home alone. Just cook the meat and add ketchup. One of the best sloppy joe sandwiches I ever put in my mouth. Who knew?
Of course, this doesn’t have to be limited to breakfast. This is a make you happy meal at breakfast, lunch or dinner.

Breakfast Tostada [w/ground turkey & hummus] {gluten-free}
Ingredients
2 corn tortillas
1/4 cup hummus
8 oz. sloppy joe meat
2 eggs
Directions
- Lightly brush the corn tortillas with olive oil and place one in a hot skillet. Let it toast until browned then flip over and let the other side brown. Repeat with the 2nd tortilla.
- In the same skillet add a little more olive oil or butter. Crack an egg into the skillet cook it to your liking.
- Spread hummus on the tortillas, add the ground turkey and the egg.
- Enjoy!
